How each one works

A burr grinder crushes beans between two abrasive surfaces (burrs), set a specific distance apart to produce a targeted, repeatable particle size. Adjusting the gap between the burrs changes the grind setting, and because the mechanism works by a consistent crushing gap rather than random impact, it produces particles within a fairly narrow, predictable size range.

A blade grinder works more like a small blender -- a spinning blade repeatedly chops beans into smaller pieces with each pass. There's no fixed gap controlling final particle size; instead, particle size is a function of how long you run the grinder and how the beans happen to bounce and settle inside the chamber during that time.

Blade grinder tradeoffs

Blade grinders are inexpensive, compact, and simple to use, which makes them a reasonable low-commitment entry point for drip coffee or French press if you're not ready to invest in a burr grinder yet. Their main drawback -- inconsistent particle size -- matters less for brew methods with a longer, more forgiving extraction window.

The technique that helps most with a blade grinder is pulsing in short bursts rather than running it continuously, and shaking the chamber between pulses to redistribute beans, which produces a somewhat more even result than one long continuous grind. It's a meaningful improvement over letting it run non-stop, though it doesn't close the consistency gap with a genuine burr grinder.

When a blade grinder is still a reasonable choice

A blade grinder is a reasonable choice if you're brewing drip coffee or French press occasionally, aren't ready to commit to a larger grinder purchase, or are grinding whole spices as well and want one simple, inexpensive tool for both. It's also a fine way to try whole-bean coffee for the first time before deciding whether you'll stick with it long enough to justify a burr grinder.

It's a poor fit if you're planning to make espresso regularly, since espresso is the brew method most sensitive to the particle-consistency gap between the two designs, or if you already know you enjoy pour-over and want to explore adjusting grind size deliberately as part of your routine -- a blade grinder's lack of a repeatable grind setting makes that kind of deliberate adjustment difficult.

If you do stick with a blade grinder for now, a few habits narrow the consistency gap somewhat: use a fresh, dry batch of beans (oily or very fresh beans clump more inside the chamber), grind a smaller batch rather than a large one at once, and stop as soon as the sound and smell suggest the beans have broken down, rather than running it well past that point out of habit.

What to look for in a burr grinder

If you've decided a burr grinder is the right next step, prioritize a genuine espresso-capable grind range if that's part of your routine, since not every burr grinder marketed for "coffee" actually grinds fine and consistently enough for espresso.
